Korean Style Organic Pork Belly Lettuce Wraps with Quick Kimchi Pickles
Marinade
Combine ingredients in a bowl, whisk until incorporated
½ cup light soy
¼ gochujang (Korean red chili paste)
1 tbsp sugar
1 tsp sesame oil
½ cup coca-cola
1 tbsp minced garlic
1 tbsp minced ginger
Slice and score pork belly
Allow pork belly to marinate up to 2 hrs
Kimchi Quick Pickled Cucumbers
2 tbsp rice wine vinegar
1 tsp gochujang
1 tbsp sugar
½ cucumber sliced thin
1 tsp salt
Combine all ingredients, let sit for 20 min
Grill pork belly 3 - 4 min each side until crispy
