Organic Rib Eye Tacos Charred Tomato Salsa & Corn Relish

 

Season room temperature Rib Eye salt and pepper on both sides

Depending on the size grill 3.5 min each side to achieve medium rare 

Cover with tin foil and let rest for about 5 minutes 

Thinly slice against the grain

Charred Salsa

  • 3 Roma tomatoes

  • 1 jalapeno 

  • 1 white onion

  • 2 cloves garlic

Broil all the above ingredients until charred and soft

Combine all ingredients and blend

  • salt & pepper 

  • juice of 1 lime 

  • ½ bunch cilantro 


Charred Corn Relish 

2 ears of grilled charred corn sliced off the cob

  • 1 red pepper small dice 

  • ½ jalapeno small dice

  • 1 red onion small dice

  • 1 bunch cilantro rough chop

Combine all ingredients in a bowl

Assemble Tacos and Enjoy!
